Banana Bread Muffins
The best
banana bread muffins! This simple and healthy bowl of banana bun muffin recipe
makes fluffy and tasty banana muffins in no time.
Ingredients
- 1 egg
- 1/2 cup white sugar
- 2 tsp baking powder
- 1/2 tsp vanilla flavoring
- 1/3 cup unsalted butter
- 1/4 cup light brown sugar
- 1 1/2 cups all purpose flour
- 3 bananas ripe, mashed

- 1/4 cup applesauce in place of butter
- 1 1/2 cup coconut or oat flour in place of all-purpose flour
Instructions
First, heat
the oven to 350 degrees Fahrenheit.
Then, in a
medium mixing bowl, combine the flour, sugars and baking powder. Mix the dry
ingredients well and set aside.
In a small
mixing bowl, combine the bananas, egg, butter and vanilla flavor. Mix well.
Using a
wooden spoon, gently fold the wet ingredients into the flour mixture. Mix
thoroughly until a paste is created.
Use an ice
cream scoop to collect the muffin mixture in a large muffin pan. Fill each
opening about 1/2 to 1/3 of the way.
Bake for 25
minutes. Remove from the oven and let cool a few minutes before serving. Happy
