Cheesy Potato & Smoked Sausage Casserole








This recipe for smoked cheese sausages and potato casseroles brings back fond memories of the past but still stands the test of time and LOVED to this day. What more could you ask for than delicious and easy comfort food?

Ingredients

  • 4 tbsp butter
  • 1/4 tsp smoked paprika
  • 4 tbsp flour
  • 2 cups half & half or milk
  • 1/2 lb Velveeta cheese cubed
  • salt & pepper to taste
  • 3 cups peeled cubed Russet potatoes, boiled until soft but not mushy
  • 1 lb smoked sausage thinly sliced
  • 1/2 cup shredded sharp cheddar cheese

Instructions

First, in a large skillet over medium-low heat, sauté the sausages in a large skillet with 1 to 2 tablespoons of olive oil, turning and stirring until golden brown.

Then, lightly spray a 9 x 13-inch baking dish with nonstick cooking spray. Transfer the cooked potatoes and sausages to a casserole dish, stirring just enough to distribute evenly.

Increase the heat to medium and add the butter to the pan. Once melted, add the flour. Let it cook for about a minute, whisking constantly, to get rid of the floury taste. Slowly add half and half, 1/4 to 1/2 cup at a time, whisking constantly until evenly incorporated. Continue cooking until thickened.

Stir in Velveeta, paprika and salt and pepper, stirring occasionally until it is completely melted and the sauce is smooth.

Pour the cheese sauce evenly over the potatoes and meat. Sprinkle the grated cheese evenly over the top.

Bake at 350 degrees for 35 to 45 minutes, or until the potatoes are fork-tender and the pan is golden brown on top.
