GENERAL TSO'S CHICKEN RECIPE
This General
Tso's chicken recipe is crispy chicken pieces coated with a sweet and spicy
sauce. A take-out classic that is simple to make at home and even better than
what you would get in a restaurant!
Ingredients:
- 1/3 cup corn starch
- 1 1/2 tablespoons oil
- 10 oz boneless skinless chicken meat, (thigh or breast, cut into bite-sized pieces)
- 1 clove garlic, (finely minced)
- 1/2 tablespoon Shaoxing wine
- 4-5 dried red chiles, (rinsed and seeded)
- 1 pinch salt
- 3 slices peeled ginger, (finely minced)
- oil for deep frying
- 2 stalks scallion, (white-part only, cut into 1-inch lengths)
Sauce:
- 1/4 cup water
- 1/2 tablespoon dark soy sauce
- 2 1/2 - 3 tablespoons Chinese rice vinegar
- 2 1/2 tablespoons soy sauce
- 1 teaspoon Hoisin sauce
- 1 tablespoon cornstarch
- 2 1/2 tablespoons sugar
- 1/2 tablespoon Shaoxing Wine
DIRECTIONS
First, marinate
chicken meat with Shaoxing wine and salt for 15 minutes. Combine all the sauce
ingredients in a small bowl. Put aside.
Then, Coat
the chicken generously with 1/3 cup cornstarch. Heat the oil for frying. Fry
the chicken until it turns light brown. Season with a colander, drain the
excess oil by placing the chicken on a dish lined with paper towels.
Heat a wok
with 1 1/2 tablespoons of oil. Add the chopped ginger, garlic and dried peppers
to the wok, sauté until you smell the spicy aroma of the peppers. Pour the
sauce into the wok. When the sauce boils and thickens, add the chicken, stir to
mix well with the sauce. Add the green onion and stir several times, take out
the dish and serve immediately. Happy Cooking Time.
