CREAM CHEESE AND CHICKEN TAQUITOS
These
taquitos are quick and easy and so delicious for an aperitif or even as a full
meal. They are cheesy and crunchy enough for everyone to enjoy!
Ingredients
- 1/2 cup salsa
- 1/3 cup sour cream
- 1 1/2 cups colby jack cheese
- 12 6 inch corn tortillas
- 6 oz cream cheese softened
- vegetable or canola oil for frying
- 3 cups chicken cooked and shredded
- 1 1/2 cups baby spinach chopped and stems removed
Instructions
First, heat
½ "of oil in a saucepan over medium heat.
Then, in a
large bowl, combine the chicken, cream cheese, sour cream, salsa, co-jack and
spinach. Add salt and pepper to taste.
Once the oil
is hot enough (place your hand on the pan, above the oil, to feel the heat),
add a few tablespoons of the chicken / cream cheese mixture in the center of a
wiggle and spread. Roll up and place the seam down in the oil using pliers.
Cook until golden brown on both sides.
Repeat until
all tortillas are filled, rolled and fried.
Put on
absorbent paper to drain.
