CHICKPEA & SWEET POTATO CURRY
Here is a
very good authentic chickpea curry which is made from scratch but which is
extremely easy! Say goodbye to boring chickpea recipes - this one contains
serious flavors but you won't need to hunt down unusual spices. You can even
have them all!
Ingredients
- 1 red chilli, minced
- 1 tablespoon of curry powder
- 1 white onion, diced
- 1 tablespoon of ginger, minced
- 2 tablespoons of garam masala
- 1 400g can of chickpeas, drained and rinsed
- 1 400g can of diced tomatoes
- ¾ cup of boiling water
- 3 cloves of garlic, minced
- 1 large sweet potato, peeled and chopped
- 1 tablespoon of white mustard seeds
- Coriander to garnish
Instructions
First, add
the peeled and chopped sweet potato to the boiling water and cook for 10
minutes or until tender. Filter and book
Then, add
the onions, garlic, chilli and diced ginger to a pan and fry over low heat in a
little olive or coconut oil for about 10 minutes until the onion starts to
become translucent
Add the
spices to the onion mixture and cook for a few minutes to form a dry spice
mixture
Add the
chickpeas, tomatoes, sweet potato and boiling water to the pan with the onions,
mix well and simmer for about 15 minutes
Garnish with
