Pistachio streusel loaf cake






A streusel cake has a crunchy, crunchy filling sprinkled on the dough before baking, adding sweetness, richness and texture. It is delicious served hot as a dessert with crème fraîche and raspberries

Ingredients

For the cake:
  • 3 large eggs
  • 150 grams (3/4 cup) sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. ground cinnamon
  • 125 ml. (1/2 cup) milk
  • 280 grams (2 cups) all-purpose flour
  • 125 ml. (1/2 cup) vegetable oil
  • Pinch of salt
  • 10 grams (2 tsp.) baking powder
  • 50 grams (1/2 cup) almond meal
  • 15-20 fresh figs cut into quarters

For pistachio streusel:
  • 50 grams cold butter, cut into cubes
  • 50 grams (1/4 cup) light brown sugar
  • 25 grams natural peeled pistachios
  • 50 grams (5 tbsp.) all-purpose flour
  • Pinch of salt

Instructions.

First, preheat the oven to 170 ° C and grease the pans.

Then, in a large bowl, combine the sugar, eggs, oil, milk, vanilla, cinnamon and salt in a uniform mixture.

Add the flour, almond flour and baking powder and mix until the batter forms.

Pour the dough into the mold and place the fig quarters on top.

Pistachio streusel: in a food processor with a steel blade, place the pistachios, flour, butter, sugar and salt and mix on high speed for 1 to 2 minutes or until a crumbly mixture is obtained .

Generously sprinkle the streusel on top of the cakes.

Bake the cakes for 35 to 45 minutes or until they are golden and hardened.

Let cool completely to room temperature, sprinkle with powdered sugar and serve. Happy Cooking Time.
