THE BEST SHRIMP QUESADILLAS
Quesadillas
are a quick and easy dinner idea, perfect for a busy night. This shrimp
quesadilla recipe is a delicious touch of a Mexican classic. Filled with melted
cheese and shrimp and topped with sour and guacamole cheese, these quesadillas
will make your taste buds smile.
Ingredients
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 1/2 cup bell pepper chopped
- 6-8 Medium flour tortillas
- 1/2 cup onion chopped
- 1 pound uncooked medium shrimp peeled and deveined
- 1-2 cups melting cheese mozzarella, cheddar, Mexican blend or Monterey Jack
- 2 tablespoons taco seasoning or 1 tablespoon chili powder and 1/2 teaspoon EACH garlic powder, onion powder, dried oregano, paprika, ground cumin, salt, black pepper
Instructions
First, heat
1 tablespoon of oil in a large skillet or frying pan. Add the chopped onion,
pepper and garlic to the pan. Cook 1 minute or until tender.
Then, add
the shrimp and taco seasoning and cook another 1 to 2 minutes or until the
shrimp begins to turn pink.
Transfer the
mixture to a bowl and rinse and whisk the pan with a paper towel. Put the pan
back on the heat and spray with cooking spray or brush with about 1 teaspoon of
vegetable oil.
Place a
tortilla in the pan and sprinkle cheese on one side of the tortilla.
Pour about
5-6 shrimp or enough to cover with another pinch of cheese. Fold the tortilla
in half. Bake 2 to 3 minutes per side or until golden and crisp. Repeat for
boring the tortillas.
Serve with
sour cream, salsa or guacamole.
