Shrimp Stuffed Potatoes
Delicious as
a party food, as a comforting dinner after a long day, or simply as a way to
celebrate the fact that bacon is not so bad for you.
Ingredients
- 1 small egg
- 3 tablespoons heavy cream
- 2 tablespoons olive oil
- 2 medium baking potatoes
- 1 tablespoon chives , chopped
- 8 ounces shrimp , peeled and deveined
- 4 celery stalks , sliced thinly
- 1/4 cup Philadelphia Original full fat soft cheese
- salt and pepper , to taste
Instructions
First, preheat
the oven to 350 degrees F.
Then, wash
the potatoes and place them on a baking sheet. Cook the potatoes for about an
hour, or until tender with a fork. When finished, remove from the oven and
allow the potatoes to cool enough to handle. Cut each potato in half lengthwise
and remove most of the meat. Be very careful not to tear the skin. Put them
back on the baking sheet and sprinkle with salt and pepper.
Heat the
olive oil in a medium pan over medium heat. Add the celery and cook gently for
a few minutes. Then add the shrimp and cook for another 3 minutes. Remove from
fire.
In a medium
bowl, whisk the egg, soft cheese and heavy cream. Stir in the mixture of
chives, shrimp and celery. Add salt and pepper to taste. Pour the mixture into
potato shells. Bake for about 15 minutes or until heated through. Happy Cooking
