Classic Chicken a la King
This classic
King chicken is full of chicken, mushrooms, peas and chillies in a rich, creamy
sauce served on puff pastry shells. The puff pastry and the fancy name give the
impression of being chic and elegant, but it's really a home-cooked meal much
like Chicken Pot Pie.
Ingredients
- 1 1/2 cups milk
- 2 egg yolks
- 1 cup frozen peas
- 1/3 cup all-purpose flour
- 2 cups chicken broth
- 8 ounces mushrooms sliced
- 1/3 cup heavy creamy
- 4 cups chopped cooked chicken
- 1 cup chopped drained pimientos
- 1/2 cup salted butter
Instructions
First, in a
large saucepan, melt the butter over medium-high heat. Add the mushrooms and
cook until the mushrooms are tender, about 5 minutes.
Then, add
the flour and stir until there are no more grains of flour. Pour the chicken
broth and milk and bring to a boil. Reduce the heat to low and simmer until the
sauce thickens, about 3 minutes.
For a richer
sauce: in a small bowl, mix the egg yolks with the heavy cream. Working
quickly, slowly pour 1/2 cup of the hot mixture into the egg mixture, whisking
vigorously. Immediately pour this mixture into the pan, whisking all the time.
Cook 2 minutes more.
Stir in
frozen peas, drained pimientos and cooked chicken and heat for 2 to 3 minutes.
Serve hot on
rice, pasta, toast or cookies.
