Almond Chocolate Chip Energy Balls
Gluten-free,
vegan and without cooking, these energetic bites are packed with nutrients and
are therefore delicious! Perfect anytime of the day, you need a boost of energy
or a quick treat on the go - breakfast, snack or dessert!
Ingredients:
- 1 tablespoons hemp seeds
- 1 tablespoons water
- 1/4 cup dried cherries
- 1 cup sliced almonds
- 8 dates, pitted
- 2 teaspoons maple syrup
- 1/4 cup mini chocolate chips
- 2 tablespoons unsweetened coconut flakes
- 2 tablespoons pumpkin seeds
Instructions:
First,add
all ingredients except chocolate chips, pumpkin seeds and water in a blender.
Then, pulse
15-20 times, until the dates are broken down and the mixture is coarsely
chopped. Scrape the sides if necessary.
Add
chocolate chips, pumpkin seeds and water and mix 3 to 5 more times until all
ingredients are incorporated.
Form balls
with a tablespoon.
Store in an
airtight container and refrigerate. Keep up to 2 weeks.
