Mozzarella Sticks
The
fantastic stretch and delicious flavor of mozzarella sticks appeal to everyone.
They are the perfect choice for a trendy aperitif with a drink, as well as a
vegetarian selection.
Ingredients
- 4 large eggs, beaten, divided
- 2 cloves garlic, minced
- 1 cup plain breadcrumbs (115 g)
- black pepper, to taste
- salt, to taste
- 1 cup all-purpose flour (125 g)
- ½ cup grated parmesan cheese, plus more for garnish (55 g)
- 12 sticks mozzarella cheese, halved crosswise
- oil, for frying
- marinara sauce, for serving
- fresh parsley, chopped, for garnish
- 2 lb russet potato, peeled and quartered (910 g)
- 2 tablespoons fresh flat-leaf parsley, finely chopped
Instructions
First, add
the potatoes in a large saucepan with enough cold water to cover them. Bring to
a boil over high heat and cook until tender when pierced with a fork, about 30
minutes.
Then, drain
the potatoes and transfer to a large bowl. Use potato masher to crush the
potatoes until there are no larger pieces left.
Add garlic,
parsley, parmesan, 1 beaten egg, salt and pepper. Mix well.
Take a
spoonful of potatoes and form a cake.
Place a
cheese stick in the middle and wrap the potato around the cheese until it is
evenly covered.
Arrange the
croquettes formed on a baking sheet lined with parchment paper and freeze for
30 minutes.
Place the
flour, the remaining 3 eggs and the breadcrumbs in 3 separate shallow bowls.
Dredge the croquettes in the flour, shaking all excess; then flirt with the egg
and breadcrumbs.
Heat the oil
in a large saucepan until it reaches 350 ° F (180 ° C). Fry the croquettes for
3 minutes or until golden brown.
Transfer the
kibbles to a grid attached to paper towels to drain the excess oil.
Cool for a
few minutes as they will be HOT.
Garnish with
grated parmesan and parsley and marinara sauce.
