Apple Orange Cranberry Sauce
This
cranberry relish recipe is filled with all kinds of fruits. It's a wonderful
blend of sweet and tart, with some crunchy apples and the sweetness of
raspberry gelatin that binds everything together.
Ingredients
- 1/3 cup granulated sugar
- 2 tablespoons fresh orange juice
- 1/2 teaspoon ground cinnamon
- 1/2 cup dried sweetened cranberries (2 ounces)
- 2 teaspoons grated orange zest
- 1/8 teaspoon ground cloves
- 3 tablespoons sweet orange marmalade
- 1 large apple (such as Fuji), peeled, cored, and cut into 1/2-inch dice
- 12 ounce package fresh cranberries , rinsed and drained
- 1 cup cranberry juice cocktail concentrate , defrosted
- 1-2 tablespoons Grand Marnier or Cointreau (optional), to taste *
Instructions
First, in a
heavy saucepan, mix the cranberry juice concentrate and the granulated sugar.
Bring to a boil over medium-high heat. Add fresh and dried cranberries and
diced apples, stirring to combine. Return to the boil and reduce the heat to
maintain a regular simmering. Cook for about 10 minutes, stirring frequently
until apples are tender, sauce thickens and cranberries "burst".
Remove from fire.
Then, stir
in orange marmalade, juice, zest, cinnamon, cloves and orange liqueur (if
available). Transfer to a bowl, cover with plastic wrap and refrigerate until
cool to allow flavors to melt. Serve chilled or at room temperature. Happy
