Slow Cooker Rotisserie Chicken





Slow Cooker Rotisserie Chicken






No need to run to the grocery store ... you can make an incredibly tasty and crispy roast chicken at home, right in the slow cooker!

Ingredients
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 3 teaspoons smoked paprika
  • 2 teaspoons dried parsley
  • 1 teaspoon salt (more or less-to taste)
  • 1 teaspoon chili powder
  • ½ teaspoon freshly ground black pepper
  • 1 whole chicken (about 4 lbs.)- neck and giblets removed

Instructions

First, spray the slow cooker with cooking spray. Roll 4 scoops of aluminum foil and place on the bottom of the greased crockpot (use as a rack for the chicken so that the juices stay in the bottom of the crockpot under the chicken).

Then, semove the neck and cup from the chicken, rinse the chicken with water and dry with paper towels.

In a small bowl, whisk together salt, pepper and seasonings. Rub the seasoning mixture over all the chicken skin.

Place the chicken on the aluminum foil. Cover with lid and cook at low for 7 to 7.5 hours, or at high for 4 to 4.5 hours until chicken is cooked through and reaches an internal temperature of 165 F.

Carefully remove the chicken from the slow cooker (it is very soft and it could crumble).

Serve the chicken at will.

If you want a crispier skin, place the chicken on a baking sheet and grill for 3-5 minutes. Happy Cooking Time.
