ROASTED WINTER VEGETABLE SALAD






It's not at all a light salad. It is full of hearty winter vegetables that will keep you satisfied and satiated for hours. And not to mention full of vitamins you absolutely need during the winter.

Ingredients

ROASTED VEGETABLES
  • 2 Carrots
  • 10 Baby potatoes
  • 1 tbsp Olive Oil
  • 1 Small Butternut Squash
  • 1 pinch Sea salt and black pepper
  • 1 Red Onion
  • 2 Parsnips

SALAD
  • 1 tbsp Olive Oil
  • 1 pinch Sea salt and black pepper
  • 2 tbsp Balsamic vinegar
  • 30 g Light Feta (or dairy-free equivalent)
  • 2 tbsp each of fresh basil, coriander and parsley, finely chopped
  • 4 Handfuls of Watercress/Rocket (arugula) salad mix

INSTRUCTIONS

First, chop all the vegetables to make them big enough. Put them in a bowl with 1 tablespoon of olive oil and a little salt and pepper and mix well. Put in a preheated oven at 200 ° C for 35 to 40 minutes.

Then, prepare the vinaigrette by mixing the olive oil, balsamic, salt, pepper and herbs.

Remove the vegetables from the oven.

Spread the salad between 2 bowls and garnish with grilled vegetables. 
Sprinkle the vinaigrette on top and crumble the feta cheese. Happy Cooking Time.
