Mini Sausage Pancake Muffins
This simple
breakfast recipe is one of my favorites. Warm and soft, the perfect combination
of sweet and savory. These mini pancake and sausage muffins are the perfect
recipe for an easy breakfast.
INGREDIENTS
- 1 egg
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 1 1/2 teaspoon baking powder
- 1/3 lb bulk pork sausage
- 1 1/2 cups all purpose flour
- 1 cup blueberries
- Warm maple syrup
- 3 tablespoons butter melted
- 1 teaspoon baking soda
- 1 1/2 cups buttermilk (see notes)
INSTRUCTIONS
First, preheat
the oven to 350 degrees and spray mini muffin tins with non-stick cooking
spray.
Then, brown
pork sausage breaking up into small crumbs. Drain any excess fat.
In a medium
bowl, whisk together the flour, baking powder, baking soda, salt and sugar.
In a large
measuring cup, whisk together the buttermilk, vanilla and egg.
Pour the
liquid mixture into the flour mixture. Add the butter and stir until
incorporated. Fill a saucepan full of spoon dough about 2/3 in each slot.
Add
three to four blueberries to the top of each. Take the rest of the dough and fold
in the crumbled sausage. Fill the second mold, filling each slit to about 2/3.
Cook 13-15
minutes. Serve with hot maple syrup.
