Pumpkin Buttermilk Waffles
An easy
recipe for pumpkin and buttermilk waffles. These buttermilk waffles are crunchy
on the outside and loaded with fall flavors! Ideal for Sunday breakfast!
INGREDIENTS:
- 1 tsp vanilla extract
- 3 tbsp sugar
- 1/2 cup pumpkin puree
- 2 tsp pumpkin pie spice
- 1-1/2 cups buttermilk
- 2 tsp baking powder
- 1 tsp salt
- 1-3/4 cups all-purpose flour
- 1 tsp baking soda
- 2 large eggs
- 1 stick unsalted butter, melted and cooled
- freshly whipped cream, pecans, and salted maple caramel sauce
DIRECTIONS:
First, preheat
KitchenAid Waffle Maker.
Then, in a
KitchenAid stand mixer, mix, stirring, fixing the eggs, buttermilk, unsalted
butter, vanilla extract and pumpkin puree for 30 seconds.
In another
bowl, combine all dry ingredients, all-purpose flour, pumpkin pie spices,
sugar, baking powder, baking soda and salt.
Add the dry
ingredients to the wet ingredients, mix on the "stir" setting for 10
seconds then switch to speed 2 for an additional 20 seconds. Scrape the sides
of the bowl and mix again for 5-10 seconds.
Spray
KitchenAid waffle maker with cooking spray, pour 1 cup batter into waffle maker.
Cook 3 minutes and 15 seconds.
Serve with
whipped cream, pecans and salted caramel caramel sauce
