Mango Coconut Chia Pudding
Creamy mango
and chia pudding. This perfectly sweet and delicious pudding contains only 7
ingredients and is so healthy that it can be used for breakfast or dessert.
Vegan and gluten-free.
INGREDIENTS
- 1/3 cup chia seeds
- 2 Tablespoons maple syrup
- 1 cup almond milk
- 1/3 cup unsweetened coconut flakes
- 1 cup coconut milk
- For the mango puree:
- 2 Tablespoons maple syrup
- 2 cups mango, cut into cubes
INSTRUCTIONS
First, in a
mixing bowl, whisk together the coconut and almond milk, chia seeds, coconut
flakes and maple syrup until well blended. Place in the refrigerator for at
least a few hours or until it is thick and of a texture similar to pudding.
Then, meanwhile,
combine the mango and maple syrup in a HIGH blender until smooth and creamy.
Place in a container and refrigerate until ready to serve.
To serve,
spread the mixture of mango puree and chia pudding in a serving dish. Be
creative! Garnish with grated extra coconut and mango. Happy Cooking Time.
