Garlic Broccoli Stir Fry
It's my
favorite way to eat broccoli. With this recipe, you can enjoy super crisp and
tasty Chinese restaurant-style garlic broccoli stir-fry at home.
Ingredients
Broccoli
Stir Fry:
- 1 teaspoon paprika
- 5 garlic cloves minced
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1 onion diced
- Black pepper & sea salt to taste
- 1/3 cup vegetable broth (80 ml)
- 1 medium head of broccoli cut into small florets (450 g)
- 1 heaped tablespoon fresh ginger minced
- Cooked rice of choice for serving
- One 15 oz can of chickpeas rinsed and drained
- 1 tablespoon oil
- Pinch of cayenne pepper
Sauce:
- 1 tablespoon cornstarch
- 2 tablespoons rice vinegar or balsamic vinegar
- 2 tablespoons maple syrup or any other sweetener
- 1/2 cup of water (120 ml)
- 3 tablespoons soy sauce (gluten-free if needed)
Instructions
First, heat
the oil in a pan over medium heat. Add the onion, ginger, garlic and all the
spices. Sauté for 3-4 minutes.
Then, add
the broccoli florets and the vegetable broth. Fry until broccoli is tender but
not soft, about 10 minutes.
Meanwhile,
prepare the sauce: in a medium bowl, combine the water, soy sauce, vinegar,
maple syrup and cornstarch. Whip.
Pour the
sauce into the pan and add the chickpeas.
Bring to a
boil until the sauce simmers. Fry for a few more minutes.
Taste and
adjust the seasonings. Add more salt / pepper / cayenne pepper if necessary.
Serve alone
or with cooked rice.
