Garlic Broccoli Stir Fry






It's my favorite way to eat broccoli. With this recipe, you can enjoy super crisp and tasty Chinese restaurant-style garlic broccoli stir-fry at home.

Ingredients
Broccoli Stir Fry:
  • 1 teaspoon paprika
  • 5 garlic cloves minced
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1 onion diced
  • Black pepper & sea salt to taste
  • 1/3 cup vegetable broth (80 ml)
  • 1 medium head of broccoli cut into small florets (450 g)
  • 1 heaped tablespoon fresh ginger minced
  • Cooked rice of choice for serving
  • One 15 oz can of chickpeas rinsed and drained
  • 1 tablespoon oil 
  • Pinch of cayenne pepper

Sauce:
  • 1 tablespoon cornstarch
  • 2 tablespoons rice vinegar or balsamic vinegar
  • 2 tablespoons maple syrup or any other sweetener
  • 1/2 cup of water (120 ml)
  • 3 tablespoons soy sauce (gluten-free if needed)

Instructions

First, heat the oil in a pan over medium heat. Add the onion, ginger, garlic and all the spices. Sauté for 3-4 minutes.

Then, add the broccoli florets and the vegetable broth. Fry until broccoli is tender but not soft, about 10 minutes.

Meanwhile, prepare the sauce: in a medium bowl, combine the water, soy sauce, vinegar, maple syrup and cornstarch. Whip.

Pour the sauce into the pan and add the chickpeas.

Bring to a boil until the sauce simmers. Fry for a few more minutes.

Taste and adjust the seasonings. Add more salt / pepper / cayenne pepper if necessary.

Serve alone or with cooked rice.
