KETO CHICKEN CORDON BLEU SOUP







This Cordon Bleu chicken soup is filled with chicken, ham and cheese broth.
INGREDIENTS
  • 4 cloves garlic, minced
  • 4 ounces onion, diced
  • 5 ounces mushrooms, chopped
  • 1 teaspoon black pepper
  • 2 teaspoons dried tarragon
  • 6 cups chicken stock
  • 12 ounces diced ham 
  • 3 tablespoons salted butter
  • 1 1/2 cups heavy cream
  • 1/2 cup sour cream
  • 4 ounces Swiss cheese 
  • 1 pound chicken breast, cubed
  • 1 teaspoon sea salt, more to taste
  • 1/2 cup grated Parmesan cheese

INSTRUCTIONS

First, heat the slow cooker over low heat.

Then, in the slow cooker, add the chicken broth, ham, mushrooms, onion, tarragon, salt and pepper. Cover and cook.

In a large pan over medium-high heat, sear chicken in butter and garlic until golden. Add chicken and all juices from the pan to the slow cooker.

Then add the heavy cream, sour cream, parmesan cheese and Swiss cheese. 
Cover and cook at low temperature for 6 hours.
