Instant Pot Lasagna Soup







Instant Pot Easy Lasagna Soup is thick and rich, with everything you love about lasagna, in a bowl!

INGREDIENTS
  • 1/2 teaspoon salt
  • 1 pound Italian Sausage
  • 2 cloves garlic minced
  • 1 small onion minced
  • 1/2 teaspoon pepper
  • 4 cups chicken stock
  • 1 teaspoon dried oregano
  • 1 large carrot peeled, and diced
  • 1/4 teaspoon red pepper flakes optional
  • 16 ounces Italian Stewed Tomatoes
  • 2 cups fresh spinach
  • 1 cup tomato sauce or marinara sauce
  • 1/2 tablespoon oil
  • 1 cup dried pasta such as rotini, campenelle, elbow noodles, etc
  • Serve with Mozzarella and Parmesan Cheese

INSTRUCTIONS

First, skip the Instant Pot function.

Then, once heated, add the oil. Fry the Italian sausage until it is almost no longer pink, breaking the sausage during cooking.

Add the onions, carrots and garlic and sauté for another 2 to 3 minutes.

Add the broth, tomatoes, tomato sauce and pasta to Instant Pot.

Place the lid on Instant Pot and turn the knob to close it. Cook at high pressure for 4 minutes.

After the cooking time has elapsed, allow the pressure to drop naturally for 5 minutes. Then do a quick release for any remaining pressure.

Add spinach to soup and let wilt.

Serve the soup with cheese.
