FLOURLESS PUMPKIN BREAD







Healthy pumpkin bread made with a whole box of pumpkin puree! This comfortable pumpkin bread recipe is filled with pumpkin spices and naturally sweetened with pure maple syrup.

INGREDIENTS
  • 2 large eggs
  • 1/2 tsp ground nutmeg
  • 1 tsp baking powder
  • 2/3 cup canned pumpkin puree
  • 1/8 tsp ground cloves
  • 1/2 cup granulated white sugar
  • 1 cup creamy almond butter (see note)
  • 1/8 tsp ground ginger
  • 1/2 tsp ground cinnamon

INSTRUCTIONS


First, preheat the oven to 350 ° F. Grease a 9 x 5 inch loaf pan.

Then, in a blender, add all the ingredients. Mix on high speed until everything is mixed. If you don't have a blender, you can also use a hand blender or whisk.

Pour the dough into the prepared bread pan. Cook for about 40 to 45 minutes, until done. The inserted toothpick should come out clean and if you gently apply pressure to the surface of the bread, it should bounce slowly rather than staying pressed.

The bread will run slightly during cooling. Let the bread cool before slicing and serving. Happy Cooking Time.
