Crunchy Cauliflower and Cashew Salad







Crunchy Cauliflower and Cashew Salad is bursting with crunchy textures and delicious flavors. It's a light salad that cooks quickly and is a family favorite that your family will surely enjoy!

Ingredients
  • 1/2 t. dried dill weed
  • 2 c. frozen peas thawed
  • 1/4 c. diced Swiss cheese optional
  • 1/2 c. plain Greek yogurt
  • 1/4 c. sour cream low fat if desired
  • 1/2 c. cashews
  • 1/8 c. sliced green onions more to taste
  • 2 c. cauliflower florets
  • 3 T. dry ranch dressing and dip seasoning
  • salt and pepper to taste

Instructions

First, in a small mixing bowl, combine the yogurt, sour cream, ranch seasoning, dill, salt and pepper. Dilute with a little milk if it seems too thick. You want it a little thinner than the consistency of sour cream.

Then, add peas, cauliflower, onions and cheese (if desired) to a large mixing bowl. Launch.

Pour the yogurt mixture over the vegetables and toss to coat. Adjust the seasonings with salt and pepper.

Cover and refrigerate for one hour.

Just before serving, sprinkle with cashews. Can mix cashews with vegetables if desired. Happy Cooking Time.
