FILET MIGNON WITH GARLIC HERB BUTTER
The only
filet mignon recipe you'll ever need. Never grill steak again - the foolproof
method of cooking the perfect filet mignon.
INGREDIENTS
- 3 tablespoon butter
- fresh ground pepper
- 2 tablespoons olive oil
- 2 teaspoons kosher salt
- 2-4 8- ounce Filet Mignon steaks, about 1 1/2 inch thick
- fresh chopped parsley
FOR THE
GARLIC HERB BUTTER
- 2 garlic cloves minced
- 1 tablespoon rosemary
- 1 tablespoon fresh thyme
- 1 stick butter softened
INSTRUCTIONS
First, remove
the steaks from the refrigerator and let them come to room temperature for
about 30 minutes.
Then, preheat
the oven to 400 degrees
Heat a cast
iron or oven skillet over high heat, add olive oil and butter, once the butter
has melted and lather, add the steaks. Cook for 2 minutes, turn them over and
cook for another 2 minutes, this gives the Filets a beautiful brown. Place the
pan in the oven and cook for 7 to 8 minutes or until desired doneness. Rare -
120-125F, rare medium - 130-135F, medium - 140-145F, medium good - 150-155F and
well done - 160-165F.
Remove the
pan, add the herb butter and let stand for 3 minutes. Serve the garnish with
fresh parsley and pan juice
For the
butter
In a small
bowl, add the butter, herbs and garlic and mix until well blended.
Place the
mixed butter on a piece of plastic wrap roll and turn the ends. Store in the
refrigerator until needed.
