CRISPY GARLIC SMASHED POTATOES
These crispy
garlic crispy 6-ingredient potatoes are a simple dish you can't stop eating -
every crunchy garlic-infused bite will make you addicted to this recipe.
Ingredients
- 3 tbsp olive oil
- salt
- pepper
- 4 cloves garlic , crushed
- fresh thyme, couple sprigs
- 2lb baby potatoes , 900g, yukon gold or red are good choices
Instructions
First, preheat
your oven to 425F or 225C
Then, bring
a large pot of water to a boil, then add the potatoes and cook until they are
just cooked but not super soft (they will continue to cook in the oven), this
will take about 15-25 minutes depending the size of the potatoes.
While the
potatoes cook, mix the oil and garlic together.
Once the
potatoes are cooked, drain them and place them on a baking sheet.
Using a
potato masher or fork, mash the top of the potatoes. I like to grate them a
little with a fork and remove a little skin on top, this guarantees more crispy
pieces when cooked.
Sprinkle the
olive oil evenly (or use a silicone brush) on top of the potatoes, then season
with salt, pepper and sprinkle on the fresh thyme leaves, then immediately
place the baking sheet in the hot oven.
Bake for
about 20 to 35 minutes, or until the top of the potatoes is good and crisp!
Serve immediately, the crisp will not be as good once the potatoes have cooled,
or if they need to be reheated later.
