Crunchy Apple Broccoli Salad







The crisp apple and broccoli salad contains everyone's favorite vegetables and fruits with a slightly sweet and tangy vinaigrette.

Ingredients
  • 1 tablespoon lemon zest
  • 1/4 cup red onion minced
  • 2 each Apples tart apple, crispin or cortland
  • 1/3 cup Vegan style mayonaise
  • 1 bunch, large broccoli cut florets from stems
  • 3 each carrots trimmed, scrubbed, shredded
  • 1-2 tablespoon rice wine or cider vinegar
  • 2 Tablespoons olive oil or avocado oil
  • 1/2 cup slivered almonds toasted
  • 1 each Avocado, ripe cut into medium dice
  • 1/4 cup dried cherries or cranberries chopped
  • 1/2 teaspoon natural salt
  • to taste fresh ground pepper

Instructions

First, separate the broccoli florets from the stems. Blanch the broccoli florets in boiling salted water for 1 to 2 minutes, drain and rinse. Place in a large mixing bowl. Cut the woody stems from the ends of the broccoli stems, peel and grate the stems. Add to blanched broccoli

Then, add apples, carrots and onions to broccoli, stir to combine.

In a small bowl, whisk together the vegan mayonnaise, lemon zest, salt, vinegar, pepper and olive oil. Taste and adjust the seasonings as needed. If you have a very large bunch of broccoli, you may need to increase the mayonnaise a little. Pour the vinaigrette over the vegetables, mix to combine.

Add the chopped dried fruit, almonds and avocado and stir gently. Serve the salad as is or on green salads or other curly lettuce.
