Cream Cheese Pistachio Cookies
This cream
cheese pistachio cookie recipe is one of my most requested cookie recipes.
People love them! They are soft, dense and tasty inside !!
Ingredients
- 2 1/4 Cups Flour
- 1/2 TSP Salt
- 1 1/2 TSP Vanilla Extract
- 3/4 Cups Sugar
- 1/2 Cup Pistachios, chopped
- 1 TSP Baking Powder
- 1/2 Cup Butter, softened
- 8 OZ. Cream Cheese, softened
- 1 Egg, room temperature
- 3.4 OZ. Package of Pistachio Pudding Mix
Instructions
First, preheat
the oven to 350 degrees.
Then, in a
large bowl, combine the cream cheese, butter and sugar with a hand mixer. Mix
until homogeneous and fluffy.
Add egg and
vanilla. Mix until homogeneous.
Add flour,
baking powder, pudding mixture and salt. Mix until everything is well combined.
The dough will become thick and hard.
Add the
chopped pistachios and mix until they are well combined.
On a large
baking sheet lined or sprayed with a nonstick spray, place a small scoop of ice
cream full of dough. Or a spoon the size of a tablespoon.
They don't
spread out very much, so it's okay to bring them a little closer.
Bake for
about 15 minutes, or until the edges start to brown.
