AUSSIE CHICKEN






Baked chicken breast covered with honey-mustard sauce, garnished with bacon and Colby / Monterrey Jack cheese. A delicious mix of sweet and savory main course, pleasant when the company arrives.

INGREDIENTS
  • ¼ cup honey
  • ¼ cup yellow mustard
  • 8 ounces mushrooms, sliced
  • 1/8 cup mayonnaise
  • 1 tablespoon vegetable oil
  • 6 slices bacon, cooked, and chopped
  • 2 tablespoons parsley, chopped
  • 1 tablespoon dried onion flakes
  • ½ cup reduced fat Monterey Jack cheese, shredded
  • 4 boneless skinless chicken breast, about 8 ounces each

INSTRUCTIONS

First, light the grill on high heat.

Then, in a medium mixing bowl, combine the mustard, honey, mayonnaise and dried onion flakes.

Heat the oil in a large ovenproof skillet over medium-high heat. Add the chicken to the pan and cook 3-4 minutes on each side until golden. Garnish the chicken with honey mustard sauce then a layer of mushrooms and bacon. Sprinkle cheese on top.

Place under grill until cheese is melted and browned. Garnish with chopped parsley. Happy Cooking Time.
