Old Fashioned Donut Muffins








I'm happy to make old-fashioned donut muffins with kids during the summer. If you're looking for recipe ideas for breakfast, try them! They would be so fun for a brunch with your girlfriends or a bridal breakfast or a baby shower.

Ingredients

For the Muffins:
  • 2 large eggs
  • 1/3 cup brown sugar
  • 1/4 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 cup granulated sugar
  • 3/4 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 2/3 cups all-purpose flour
  • 1/4 cup butter
  • 3/4 teaspoon ground nutmeg

For the Glaze:
  • 3/4 teaspoon vanilla
  • 2 tablespoons hot water
  • 3 tablespoons butter; melted
  • 1 cup confectioners’ sugar; sifted

Instructions:

First, Preheat oven to 425 degrees F. Line 12 muffin cups with liners or spray with nonstick cooking spray.

Then, In the bowl of a stand mixer with the palette attachment, beat butter, vegetable oil and sugars together until smooth. Beat the eggs, one at a time. With the low speed mixer, baking powder, baking soda, nutmeg, cinnamon, salt and vanilla until everything is well mixed. Stir the flour into the butter mixture alternately with the milk, starting and ending with the flour and making sure everything is well mixed.

Pour the batter into the cups, filling the cups and smooth tops. Divide the dough evenly into the prepared muffin cups. Bake until muffin top is pale and golden to taste, 15 to 17 minutes, turning halfway through cooking. Let the muffins cool in a muffin pan for 5 minutes, then transfer to a rack and allow to cool for 10 minutes before icing.

To make the icing, mix the melted butter, icing sugar, vanilla and water in a medium bowl. Whisk until smooth.

When the muffins have cooled slightly, immerse the crown in the frosting and let it harden. Once hardened, soak a second time and allow to harden and serve. Happy Cooking Time.
