FAJITA CHICKEN CASSEROLE
Baked
chicken fajitas with brown rice and a cheese filling are an easy-to-use recipe,
perfect for a family dinner with ease.
Ingredients
- 1.5 tbsp fajita seasoning
- 8 oz cream cheese softened
- 1 red pepper seeded and sliced into small strips
- 1 large onion peeled and sliced into small strips
- 10 boneless skinless chicken thighs (about 2 pounds)
- 8 oz shredded cheddar
Instructions
First, Preheat
the oven to 350. Put the chicken in the casserole that you will use for this
dish. Cover with foil and bake until cooked to 160 degrees, about 30-40 min.
Cool for a few minutes, then chop or chop into bite-sized pieces. Drain the
cooking liquid from the casserole.
Then, Meanwhile,
in a frying pan coated with cooking spray, cook pepper and onion over
medium-low heat until golden brown and tender. I let mine caramelize all the
time that the chicken was in the oven. I just let the heat in between low and
medium and jumped into the kitchen to give them a stir every 5-10 min. Cool
until warm.
In a large
bowl, combine cream cheese, half grated cheddar and fajita seasoning. Add the
chopped chicken, onion and pepper. Put back in the same oven dish that you
cooked the chicken. Sprinkle remaining cheese.
You can refrigerate the
casserole for a day or two at this stage. I made it in the morning and put it
in the oven before dinner.
Bake at 350
° C for 35-40 minutes until the mixture is hot and bubbling. Happy Cooking
