EASY THAI CHICKEN
We tried
this recipe last night and it was incredibly delicious. And easy too !! It is
important to use chicken legs with the skin. My husband wanted to steal the
sweet crunchy and spicy skin of my plate, but I could not let him.
INGREDIENTS:
- 1/4 cup peanuts, chopped
- 8 bone-in, skin-on chicken thighs
- 2 tablespoons chopped fresh cilantro leaves
- 2 tablespoons unsalted butter
FOR THE
SAUCE
- 2 cloves garlic, minced
- 1 tablespoon fish sauce
- 1 tablespoon freshly grated ginger
- 1 teaspoon Sriracha, or more, to taste
- 1/2 cup sweet chili sauce
- 2 tablespoons reduced sodium soy sauce
- Juice of 1 lime
DIRECTIONS:
First, Preheat
oven to 400 degrees F.
Then, In a
small bowl, whisk together the chili sauce, soy sauce, garlic, fish sauce,
ginger, lime juice and sriracha. put aside.
Melt the
butter in a large ovenproof skillet over medium-high heat. Add chicken, skin
down, and sear on both sides until golden, about 2-3 minutes per side. Stir in
the chili sauce mixture.
Place in the
oven and roast until fully cooked, reaching an internal temperature of 165
degrees F, about 25-30 minutes. Then grill for 2-3 minutes, or until
caramelized and lightly charred.
Serve
immediately, accompanied by peanuts and cilantro, if desired.
