CREAMY SAUSAGE TORTELLINI SOUP






CREAMY SAUSAGE TORTELLINI SOUP











A delicious and comforting soup made with sausage powder, cheese tortellini and fresh spinach.

INGREDIENTS:
  • 5 c. chicken broth
  • 1 small shallot, diced
  • ¼ c. all-purpose flour
  • 1 tsp. kosher sea salt
  • 1 small yellow onion, diced
  • 4 garlic cloves, minced
  • ½ tsp. ground black pepper
  • 2 large carrots, peeled and diced
  • 14 oz. refrigerated cheese tortellini*
  • ½ tsp. Italian seasoning
  • 2 c. half & half (or heavy cream)
  • 1 lb. Italian sausage
  • 6 ounces chopped fresh spinach

DIRECTIONS:

First, In a large saucepan, cook sausage until golden brown. Using a spoon to drain, transfer the cooked sausage to a paper towel-lined plate; put aside.

Then, Add onion, shallot and carrot, sauté for 5 minutes or until vegetables are tender. Add garlic and sauté for another 2 minutes or until fragrant, stirring occasionally to prevent burning.

Stir in the flour, whisking and cook for 1 minute. Gradually add chicken broth and whisk. Continue cooking until mixture simmers, then reduce heat to medium-low and simmer for 6 minutes.

Sprinkle as much sausage fat as possible, then add it with tortellini, salt, pepper, Italian seasoning, spinach and half. Simmer 5 minutes or until tortellini is cooked through.

Serve immediately with freshly grated parmesan, if desired.
