Bacon Ranch Potato Salad
Such a
potato salad recipe tasty and easy! Simply boil the potatoes in boiling water,
strain them and mix them with ranch, cheese and green onions. A new must of the
summer!
Ingredients
for the
ranch:
- 2 tsp dried chives
- 1/8-1/4 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp paprika or smoked paprika
- 3/4 tsp fresh lemon juice
- 1 tsp onion powder
- 1/2 cup homemade paleo mayo or purchased paleo mayo
- 1/2 tsp fresh chopped dill dried is okay too
for the
potato salad:
- 1 bunch scallions light and dark green parts, thinly sliced
- 1 1/2 lbs small red skinned potatoes scrubbed
- 8 slices nitrate free bacon sugar free for Whole30 cooked and crumbled
- Ranch dressing to toss with
Instructions
First, Bring
a large pot of salted water to the boil, add the potatoes carefully, put them
back to the boil and cook for about 20 minutes or until they are tender (they
should be tender, but not too they fall apart)
Then, Drain
the potatoes and place them in the refrigerator until the ambient temperature
is at least equivalent. (The freezer will work if you are in a hurry.)
While the
potatoes are cooling, prepare the ranch dressing by whisking all ingredients
together until smooth, then refrigerate until ready to serve.
If you have
not already done so, cook your bacon until it is crisp in a large deep frying
pan, drain it / cool it on paper towels and crumble it.
Once the
potatoes are cool, cut them into small pieces and mix them with the crumbled
bacon and chopped green onions, then the ranch vinaigrette.
Decorate with more
green onions and bacon or fresh dill, if desired. Happy Cooking Time.
