CREAMY BROCCOLI MAC AND CHEESE
This cheese
and broccoli macaroni is an easy recipe with tender pasta in a creamy cheddar
sauce and lots of steamed broccoli. An easy and friendly meal!
INGREDIENTS:
- 1 1/3 cups whole milk
- 2 cloves garlic, minced
- 1 cup half and half
- 1 shallot, minced
- 1 teaspoon Dijon mustard
- 2 tablespoons unsalted butter
- 3 cups chopped broccoli florets
- 2 tablespoons all-purpose flour
- 6 ounces extra-sharp cheddar cheese, grated
- 8 ounces medium pasta shells
- Kosher salt and freshly ground black pepper
DIRECTIONS:
First, In a
large pot of boiling salted water, cook the pasta according to package
directions; drain well.
Then, Melt
the butter in a large skillet over medium-high heat. Add the garlic and shallot
and cook for about 2 minutes, stirring frequently until fragrant.
Stir in
flour until lightly browned, about 1 minute. Gradually add the milk, half and
half and Dijon, until slightly thickened, about 3-4 minutes. If the mixture is
too thick, add more milk as needed; Season with salt and pepper to taste.
Stir in
pasta, broccoli and cheese until well blended, about 3-4 minutes.
