Christmas Sugar Cookie Bars
Avoid
rolling sugar cookies and cutting them and make these Christmas sugar cookie
bars! You get this taste of sugar biscuit in bar form, for this easy and hassle
free dessert. Cut them into slices and serve them at a party or dessert after
dinner.
INGREDIENTS
SUGAR COOKIE
BARS
- 2 eggs
- 1 tsp cornstarch
- 1 cup sugar
- 2 1/4 cups flour
- 1 tsp baking soda
- 1/4 tsp baking powder
- 2 tsp McCormick vanilla extract
- 3/4 cup butter, room temperature
VANILLA
ICING
- 2–3 tbsp water or milk
- 1/4 cup shortening
- 1 tsp McCormick vanilla extract
- 2 cups powdered sugar
- 1/4 cup butter
INSTRUCTIONS
First, Prepare
a 9-inch square baking pan with parchment paper in the bottom and sides,
sticking over the edges of the pan, and preheat the oven to 350 degrees.
Then, Beat
butter and sugar together until light and frothy, about 3-4 minutes.
Stir in eggs
and McCormick vanilla extract.
With the
mixer at low speed, add flour, cornstarch, baking soda and baking powder.
Squeeze the
cookie dough in an even layer in the pan.
Bake for
19-21 minutes. The center of the cookie will always look a little cooked, but
it's ok.
Remove from
oven and let cool completely in the mold.
Use
greaseproof paper on the edges of the mold to pull the bars out of the tray.
To make the
glaze, beat the shortening and butter together until smooth.
Add
McCormick vanilla extract and mix until smooth.
Slowly add
the powdered sugar and mix until smooth.
Add water or
milk as needed.
Spread the
frosting on the bars and cut into squares.
