SAMOA CHEESECAKE BARS
Smooth and
creamy cheesecake without cooking, topped with grilled coconut, chocolate and
dulce de leche, all the good taste of Samoa in a fresh dessert.
Ingredients
Oreo Crust:
- 1 large egg
- 5 Tablespoons butter, melted
- 20 Oreos
Cheesecake
layer:
- ¼ cup sugar
- 2 teaspoons vanilla extract
- 16 ounces cream cheese, softened to room temperature
Coconut
Caramel Layer:
- 1½ cup coconut, toasted
- 3 Tablespoons heavy cream
- 11 ounce package caramels, like Kraft
Chocolate
drizzle:
- 1 cup semi sweet chocolate chips
Instructions
First, Preheat
the oven to 350 degrees. Prepare an 8x8 baking dish by doubling it with foil to
allow the sides to overhang for easy removal.
Then, In a
food processor, beat the ore into a fine crumb. In a medium bowl, mix crushed
cookies and butter. Squeeze the bottom of the pan and bake for 9 to 10 minutes.
Let cool.
Combine
cream cheese, egg, sugar and vanilla until smooth and creamy. Spread on the
crust. Bake for 30 to 35 minutes or until cheese cake is set.
Cool
completely and refrigerate for one hour.
To make the
coconut caramel layer: Add the caramel and heavy cream in a microwaveable bowl
and cook 30 seconds at a time until they are melted and evenly cooked. Add the
grilled coconut. Cool about 10 minutes and spread over the layer of cheese
cake. Put back in the refrigerator and let cool for 3 hours.
Melt
chocolate chips in microwavable bowl, cooking for 30 seconds until smooth.
Sprinkle with caramel. I like to let my bars rest for about 30 minutes before
cutting to let the caramel soften a little.
