Mango Habanero Chicken Wings
Spicy, sweet
and addictive, these habanero mango chicken wings are a real treat for the
crowd.
Ingredients
FOR THE
WINGS
- 1 tablespoon flour
- 1 teaspoon garlic powder
- 1 tablespoon baking powder
- 1 tablespoon Cajun seasoning blend
- 2 pounds chicken wings separated and wing tips removed
- Salt and pepper to taste
FOR THE
MANGO HABANERO SAUCE
- 3-4 cloves garlic chopped
- 1 teaspoon cayenne
- 1 ripe mango peeled and chopped
- 6 habanero peppers chopped (use more or fewer, as desired)
- Pinch of salt
- ¼ cup honey
- ¼ cup apple cider vinegar
- Juice from 1 small lime
Instructions
First, Pat
the wings as dry as you can get them. This will help with the crisp.
Then, Set
the wings in a large bowl and season with the baking powder, Cajun seasonings,
flour, garlic powder, salt and pepper. Mix to get them beautiful and coated.
Baking powder helps crispiness
Heat the
oven to 250 degrees. Place the wings on a lightly oiled baking sheet and bake
for 30 minutes.
Increase
oven heat to 425 degrees and cook another 30 minutes, or until wings are cooked
through and skin is crisp and beautiful.
For the
sauce, add the mango, habaneros, garlic, cayenne pepper, vinegar, lime juice
and a pinch of salt to a food processor. Process until beautiful and smooth.
Pour sauce
into saucepan with honey and heat over medium-low heat, stirring frequently
until sauce is heated and honey is incorporated, about 5 minutes.
Remove from
heat and mix with the finished wings.
