Easy Pumpkin Pie Bites
These
pumpkin pie bites are perfectly portable, easy to prepare and easy to prepare.
With just a few ingredients and almost no preparation time, you can have your
pumpkin pie as bites!
Ingredients
- 1/2 cup sugar
- 1 cup pumpkin puree
- Homemade All Butter Pie Crust or 2 pre-made, ready to roll pie Crusts
- 1 tsp vanilla
- 2 eggs + 1 egg for egg wash
- 1 tsp pumpkin pie spice
- 1 (8oz) package cream cheese, softened to room temperature
- Whipped cream
Instructions
First, Preheat
the oven to 350 degrees.
Then, Grease
and flour (or use a nonstick cooking spray) a mini-muffin pan. Put aside.
Roll the
dough or pie crust on a floured surface with a floured rolling pin.
Use a cookie
cutter or round cookie cutter (about 3 inches in diameter) cut at least 24
rounds (or 12 rounds of each pie crust, if you are using a store bought)
Gently
squeeze each turn into the mini-muffin pan. Use your fingers to round the ends
in a pie crust.
Brush eggs
with one egg over each pie.
Using an
electric mixer, beat the cream cheese and sugar until smooth. Add eggs one at a
time, beating each until combined.
Add the
pumpkin puree and beat to mix well. Stir in vanilla and pumpkin pie spice.
Pour the
mixture into each mini tart crust almost to the top.
Bake for
15-20 minutes or until edges are golden.
Remove from
oven and let cool on a wire rack, or allow to cool in the refrigerator for 30
minutes.
Garnish with
whipped cream and sprinkle with pumpkin pie or cinnamon and serve. Keep
refrigerated.
* Pies are
puffed out of the oven, but fall when cooled.
