Chicken Alfredo Roll-Ups
These
Alfredo chicken lasagna roll-ups are all the flavors of classic Alfredo chicken
wrapped in lasagna noodles for easy rolls. A simple dinner recipe on weekdays
that will please the whole family.
Ingredients
- 2 cups shredded mozzarella cheese
- 2 cups cooked and shredded chicken (I used rotisserie)
- 8 Lasagne noodles
Garlic
Alfredo Sauce:
- ½ teaspoon minced garlic
- 1 teaspoon garlic powder
- 1 teaspoon italian seasoning
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 4 ounces cream cheese
- 1 cup grated parmesan cheese
- ¼ cup butter
- 1 pint heavy whipping cream (2 cups)
Instructions
First,
preheat the oven to 350 degrees. Spray a 9 x 13-inch baking dish with cooking
spray and set aside.
Then cook
the lasagna noodles according to package directions until they are al dente.
Drain and rinse the noodles in cold water and place on a paper towel to remove
excess water.
In a medium
saucepan, add butter, heavy whipped cream and cream cheese. Cook over medium
heat and whisk until melted. Add minced garlic, garlic powder, seasoning, salt
and pepper. Continue whisking until smooth. Add the grated parmesan cheese.
Simmer and continue cooking for about 3 to 5 minutes or until the mixture
starts to thicken. Line the bottom of the 9 x 13-inch pan with 1 cup of alfredo
sauce.
Spread 2
tbsp. Alfredo sauce on each noodle. Take 1/4 of the grated chicken and spread
it evenly over each noodle. Add about 3 tablespoons grated cheese. Carefully
wrap each lasagna noodle and place the seam down into your prepared 9 × 13
dish. Repeat.
Once they
are all in the pan, pour the remaining Alfredo sauce on top and cover with
remaining cheese. Bake at 350 ° C for about 30 minutes until everything is hot
and the cheese is bubbling.
