Bakewell Blondies







Bakewell Blondies








A divine fusion of Bakewell almond pie and butter caramel blondies, sprinkled with whole cherries. Ideal for tea time, or served hot as a pudding with a scoop of ice cream

Ingredients
  • 3 Medium Eggs
  • 125 g Light Brown Sugar
  • 100 g Ground Almonds
  • 200 g Plain Flour
  • 1 tsp Almond Extract (optional)
  • 1 tbsp Cornflour
  • 50 g Flaked Almonds
  • 200 g White Chocolate Chips
  • 125 g White Granulated Sugar
  • 250 g Unsalted Butter (melted)
  • 250 g Raspberry Jam (or any other flavour!)


Instructions

First, Preheat your oven to a 180 ° C / 160 ° C fan and cover a square dish with 9 x 9 "parchment paper.

Then, In a large bowl, add your melted butter and sugars and beat until smooth.

Add the egg and almond extract and beat again until smooth.

Add the flour, ground almonds and corn flour and beat until the mixture is thick - it does not take long to create this mixture!

Add your white chocolate chips and fold them.

Pour the mixture into the mold and spread it. A spoonful of bread in the jam and slightly swirling in the blondie mixture.

Sprinkle with flaked almonds!

Bake the Blondies in the oven for 35 to 40 minutes or until there is a slight flicker in the middle.
