Taco Chicken Casserole
If you like
chicken tacos, you'll love this Taco chicken casserole. So easy to throw the
ingredients together, enjoy with all your favorite toppings!
INGREDIENTS
- 1 1/2 cups sour cream
- 1 (10 ounce) bag tortilla chips
- 1 (1 ounce) packet taco seasoning mix
- 1 (14 ounce) can diced tomatoes and green chilies (Ro-tel)
- 2 cups shredded cheddar cheese (divided)
- 1 (15 ounce) can black beans (rinsed and drained)
- 2 (10.75 ounce) cans cream of chicken soup
- 4 boneless skinless chicken breasts (cooked and shredded)
INSTRUCTIONS
First, Preheat
the oven to 350 degrees.
Then, Lightly
grease a 9 x 13 inch pan.
In a large
bowl, combine chicken soup, sour cream, diced tomatoes, black beans, taco
seasoning and chicken. Put aside.
Crush crisps
(I just crush them with my hands) and spread half on the bottom of the pan
Spread half
of the chicken mixture over the tortillas. Garnish with 1 cup of cheese. Repeat
the layers.
Bake for 30
minutes, until cheese is bubbling and cheese begins to brown. Happy Cooking
