Instant Pot Ramen
This instant
ramen is delicious, with chicken, eggs and vegetables in a hearty chicken soup.
Spice ramen noodles with hot oil.
Ingredients
- 3 cloves of garlic minced
- 1 tablespoon of sesame oil
- 1 teaspoon of freshly grated ginger
- 2 tablespoon of soy sauce
- 8 cups of water
- 8 ounces of dried ramen or udon noodles
- 8 oz fresh mushrooms sliced
- Kosher salt and freshly ground pepper
- 1 cup of thinly sliced baby spinach
- 1 whole 3-4 pound chicken giblets removed and discarded
- 1 large carrot peeled and grated
Optional
- Soft Boiled Egg
- Sesame Seeds for garnish
Instructions
To prepare
boiled eggs:
First, Place
the trivet in Instant Pot and add 1/2 cup of water.
Then, Place
four eggs in the Instant Pot, lock the lid and make sure the pressure valve is
set to seal,
With the
manual setting, set Instant Pot to High Pressure for 3 minutes.
Once 3
minutes have passed and Instant Pot beeps, release the pressure quickly and
remove the eggs as soon as the pressure pin drops.
Place the
eggs in an ice-water bath until cool.
To prepare
the soup:
First, Set
Instant Pot to Jump to normal heat.
Then, Heat
sesame oil, garlic and ginger for 1-2 minutes.
Add the
sliced mushrooms, then the water, the soy sauce, 2 teaspoons of kosher salt,
several rounds of freshly ground pepper and the chicken in a casserole dish.
Disable the
Jump function, lock the Instant Pot tank cover, make sure the pressure valve is
in the seal position and set Instant Pot to High Pressure for 20 minutes in
manual mode.
Instant Pot
will take 15 to 20 minutes to pressure, then count down for 20 minutes.
After 20
minutes at high pressure, Instant Pot will beep and go into warm mode.
Turn the
relief valve to the quick release pressure.
Gently open
the Instant Pot keeping the lid tilted to avoid very hot steam.
Remove the
chicken wole and set aside to shred.
Return
Instant Pot to the Skip function and let the chicken broth boil.
Stir in the
rattles and cook approximately as directed on the package.
While
cooking noodles, shred chicken into bite-sized pieces and discard bones and
skin.
Once cooked,
add chicken meat, carrots and spinach.
Adjust salt
and pepper to taste.
Decorate
with a boiled egg and a pinch of sesame seeds.
