Cauliflower Fritters
Simple and
very tasty, this basic recipe of cauliflower donuts is ideal for everyone. You
will not be able to stop at one!
Ingredients:
- 2 large eggs
- 1 lb cauliflower florets
- 2 tbsp coconut flour
- 1 cup shredded cheddar cheese
- 2 tbsp finely chopped scallions plus additional for garnish
- olive oil for cooking cauliflower fritters
- sour cream for garnish
Directions:
First, Grate
the cauliflower with a food processor or a large cheese grater. Cook the
cauliflower until tender.
Then, Stir
in cheese with cauliflower while cauliflower is still hot, until cheese is
melted and smooth.
Add eggs,
coconut flour and green onions. Mix until everything is evenly combined.
Use 1/4 cup
to pick up the cauliflower paste. Use the back of a spoon to compress and
compact the cauliflower mixture in the measuring cup.
Add about 2
tbsp. Soup olive oil in nonstick skillet and bring to medium heat. Place the
cauliflower paste in the pan and press gently to form a thick disc. Cook the
cauliflower a few minutes on each side until crisp. Make sure the bottom is
completely browned and cooked before turning cauliflower on the other side.
Cauliflower will not be stable enough to turn around until one side is cooked.
