SOUTHERN BANANA PUDDING
This
Southern Banana Pudding is a recipe from the Heritage Family and a classic
Southern Dessert. The airy meringue over a creamy pudding is a delicious
favorite and makes the best banana pudding!
Ingredients
- 2 eggs
- 1/2 tsp salt
- 1 1/3 cup sugar
- 4 Tbs butter
- 6 Tbs cornstarch
- 4 tsp vanilla extract
- 4 large bananas sliced
- 2 egg yolks
- 1 container whipped topping or homemade
- 4 cups milk
- 1 large box vanilla wafers reserve 1/2 cup crushed wafers for topping
Instructions
First, In
the saucepan, combine the milk, sugar, cornstarch, salt, egg and egg yolk.
Then, Heat
over medium heat, whisking almost continuously until a thick fondant is
obtained.
Remove from
heat and stir in butter and vanilla until melted.
Cover with
Saran Wrap film by squeezing the film on the pudding to prevent film formation,
place it in the refrigerator and allow it to cool to room temperature.
Once cooled
in a 9 "x13" baking dish, place 1/2 layer of vanilla wafers and add 1
1/2 of your bananas.
Pour half of
the mixture on top, then continue the layers one more time. Finish your layers
with banana slices, then top with whipped topping and crushed vanilla wafers.
Refrigerate
at least 2-3 hours before serving. Happy Cooking Time.
