QUICK CORN FRITTER
There's something luscious about the crispy exterior, the soft internal structure and then the mouth-watering pieces of sweetcorn. Perfect for a quiet brunch after a busy evening.
Ingredients
- 1 egg
- ⅓ cup all-purpose flour
- salt and pepper to taste
- 1 green onion, chopped
- 2 tablespoons of oil
- ¼ cup of milk or more if needed
- 2 cups fresh, frozen corn or leftover corn on the cob
- cup of cornmeal
- 1 tablespoon minced jalapeƱo
- ½ cup Monterey Jack cheese
- ⅛ teaspoon of smoked paprika
Instructions
First, combine all ingredients except milk and oil in a small bowl. Mix well.
Then, add milk little by little if needed to make a moist mixture that can still hold its shape.
Heat the oil over medium heat in a pan. Pour 2-3 tablespoons of the corn mixture over the hot oil. Cook 3-4 minutes or until golden, flip and cook an additional 3-4 minutes.
Garnish with sour cream to serve.
