Beans and Rice Taco Soup
Bean Rice Taco Soup may be a 30-minute meal casserole made with only durable canned ingredients. This hearty, delicious tomato soup is crammed with spicy salsa, black beans, corn, rice and taco seasoning.
INGREDIENTS
15 ounces canned beans, drained and rinsed
1 cup raw rice
15 ounces canned corn, drained
15 ounces of spaghetti sauce
16 ounces of salsa
32 ounces chicken, beef, or vegetable stock
1 tbsp taco seasoning
2 glasses of water
INSTRUCTIONS
1.In a saucepan over medium-high heat, all ingredients, stir until combined.
2.Cook for 20 minutes (for regular rice) or until the rice is cooked through. If using instant rice, pasta, or other grains, cook consistent with package directions. Open the lid and stir twice during cooking to stop the rice from sticking to rock bottom .
3.Remove from heat and add up to 2 cups of water to thin the soup. Otherwise, the soup are going to be thick, like stew. Let stand 5 minutes, then serve.
