BRAZILIAN SHRIMP SOUP
This Brazilian Shrimp Soup is an incredibly delicious creamy tomato soup that contains shrimp, coconut milk and freshly squeezed juice . Perfect for any occasion!
INGREDIENT
2 tablespoons vegetable oil
1 medium onion, chopped
1 chopped bell pepper (I used red)
4 cloves garlic, chopped
1/2 cup long grain rice
1/4 teaspoon red pepper flakes
1 teaspoon salt
28 ounces chopped tomatoes (1 large can)
4 glasses of water
1 cup unsweetened coconut milk
1 pound medium shrimp, peeled and dig 1-inch pieces
1/4 teaspoon ground black pepper
3 tablespoons juice from 1 lemon
1/2 cup chopped fresh parsley, for garnish

INSTRUCTIONS
1.In a large saucepan, heat the vegetable oil over low heat. Add the onion, bell pepper, garlic and cook, stirring occasionally, until the onion and bell pepper are tender. About 5 minutes.
2.Add rice, red pepper flakes, salt, tomatoes and water to a saucepan and convey to a boil. Cook until the rice is nearly cooked through, about 10 minutes.
3.Add coconut milk to the soup. bring back a boil then add the prawns. bring back a boil, stirring occasionally, until prawns are cooked through, 3 to five minutes.
4.Add black pepper, juice and parsley
