Steamed Wontons in Chili Broth

INGREDIENT
1 clove , finely chopped
1 onion , finely chopped
1 cup finely chopped cilantro plus extra for garnish
10 chives, finely chopped
5 dried, rehydrated and finely chopped shiitake mushrooms
2 fresh Chinese wombok cabbage leaves, finely chopped
150 g shrimp peeled and diced, finely diced
1 teaspoon soy
1/2 teaspoon sugar
2 teaspoons vegetable oil
20 packs of dumplings
chili broth
200 ml chicken broth
1/2 tablespoon oyster sauce
3-4 teaspoons of Chiu Chow chili oil
INSTRUCTIONS
1.Place all chopped ingredients and diced shrimp during a bowl . Add soy , sugar and vegetable oil . Mix everything.
2.Prepare a packing bin - a clean stool, alittle bowl of water, and a wrapper for dumplings. Wrap the wonton following these simple directions: a) Place 1 teaspoon of shrimp mixture within the center of the wrap. Using your index , lightly wet all sides. b) Fold rock bottom corner of the dough up to make a triangle. Press to hide all sides. c) Take 2 triangular corners on the bottom and pull them towards one another , one to overlap. d) Lightly moisten the ends and press them together to secure them.
3.Place the dumplings during a deep bowl. Bring the chicken broth to a boil during a saucepan, add the oyster sauce and chili oil. Taste and adjust. Then pour the chilli broth over the wonton.
4.Steam the wok. After the water boils, put the bowl within the pan, cover and steam for 8 minutes or until cooked. Remove, garnish with chopped cilantro and serve hot.
