Calamari Puttanesca


 Calamari Puttanesca



This is the fusion recipe I imagined in India. excellent served over basmati rice.


INGREDIENT

1 lb squid, cleaned and chopped

1 can Italian tomatoes, coarsely chopped

2 cloves of garlic, crushed

1 green chili, chopped

1 tablespoon capers

cup kalamata olives, pitted whole

cup green olives, whole, pitted

3 tablespoons extra virgin vegetable oil

cup fresh cilantro, finely chopped

2 cinnamon sticks

1 teaspoon salt

1 teaspoon pepper


INSTRUCTIONS

1.Heat some vegetable oil during a large saucepan. Add garlic and paprika. When the garlic is golden, add the capers, olives, and green peppers. Coarsely chop the Italian tomatoes before adding them to the skillet, along side half the chopped cilantro, cinnamon sticks, salt and pepper, and cook for a moment or two.

2.Add the squid, tentacles and everything to the pot and cook for a couple of minutes for the flavors to mix . Remove the cinnamon sticks.

3.Finally, garnish with the remaining cilantro and serve.
