SPINACH AND RICOTTA GRILLED CHEESE


 SPINACH AND RICOTTA GRILLED CHEESE




Crispy, buttery fresh, toasted bread crammed with Parmesan cheese and melted mozzarella and every one the flavour of spinach cannelloni in but 10 minutes.


INGREDIENT

1 clove , puree

1/3 cup ricotta cheese (I use low fat)

1/4 cup chopped frozen spinach, thawed

2 tablespoons grated parmesan

Sea salt and ground pepper, to taste

Mix dry Italian spices, consistent with taste (mix of oregano and basil)

1/4 cup grated mozzarella cheese (or fresh mozzarella, thinly sliced)

4 thick slices of sour bread

1 tablespoon butter (light or light spread)

1/2 cup of your favorite spaghetti sauce (Passata or ketchup for American readers)


INSTRUCTIONS

1.In a medium skillet / skillet, cook the garlic during a little vegetable oil (or vegetable oil spray), until fragrant (about 30 to 60 seconds) over medium-high heat. Remove from fire; add garlic during a small bowl; put aside the skillet.

2.Add the ricotta, spinach, parmesan, salt / pepper, and Italian spices to the stir-fried garlic and blend well.

3.Butter one side of every slice of bread. Divide the ricotta mixture in half and cover the edges of the 2 unbaked slices of bread; split the mozzarella cheese in half and increase the ricotta mixture; top with the remainder of the bread - butter confront (for making sandwiches).

4.Return skillet / skillet to stove over medium heat and place sandwiches in skillet. Cook, turning once, until the cheese is melted and each side are golden (about 3-4 minutes per side).

5.Sprinkle with additional Italian seasonings and serve with spaghetti sauce (optional)
