Sourdough Soda Bread
Soda bread is one among our staples for St's Day. Patrick, and this year we would like to try to to something a touch different. While we've always loved our tried and true soda bread recipes, we've put these variations on, too.
INGREDIENTS
2 1/2 cups (276 g) Arthur Irish Wholemeal Flour
1 1/4 cups (149 g) of unbleached Arthur all purpose flour
1/2 cup (74 g) of your chosen plant grain or grain and grain mix
1 teaspoon bicarbonate of soda
3/4 teaspoon salt
1 cup (227 g) batter, cooked (fed) or discarded
4 tablespoons (57 g) butter, melted
3 tablespoons (64g) honey
3/4 cup (170 g) milk
INSTRUCTIONS
1.Preheat oven to 400 ° F. Lightly grease a baking sheet or line with paper.
2.In a medium bowl , beat together the flour, whole grains, bicarbonate of soda , and salt mixture.
3.In another bowl (or during a measuring cup), beat the starter, butter, honey and milk. Pour this mixture into the dry ingredients. The dough will become stiff; if it's too brittle to squeeze, add a tablespoon or two of milk.
4.Knead the dough several times to carry it together, divide it in half and shape each half into a ball. Flatten the ball a touch and place it on the prepared baking sheet. Use a pointy knife to chop the crosses 1/2 inch deep, lengthwise to the sting , across the highest of every loaf.
5.Bake the buns for 30 to 40 minutes, until they're golden brown and a toothpick or toothpick inserted within the center comes out clean. Remove the bread from the oven and grease the highest with melted butter.
